Korean comfort food – tastes great after a long run in the rain. Versatile and easy to throw together with the vegetables you probably have on hand. Spinach, carrots, zucchini, cucumbers, beansprouts if you have them, and hopefully some kimchi, even if it’s been sitting in your fridge for an awfully long time. Lightly cook (e.g., quick parboil or fast saute) the veggies, toss them with a bit of sesame oil and a dash of soy sauce or fish sauce, toss them with some white or brown rice, and if you want the meat version, a bit of ground beef flash fried with garlic, ginger, chopped scallion (but great as a veggie dish too). Top with a fried egg, squirt with some Korean hot sauce or any chili sauce of your choice, and there you have it.
